ZUCCHINI MUFFINS RECIPE

3 eggs ▢1 cup butter melted ▢1 tbsp vanilla extract ▢1 banana mashed ▢1 1/2 cups shredded zucchini (about 2 medium zucchinis) – rung out ▢2 1/2 cups sugar ▢3 cups all-purpose flour ▢2 tbsp cinnamon ▢1 tsp baking soda ▢1 tsp salt ▢1/4 tsp baking powder ▢1 cup walnuts chopped, optional ▢1 cup chocolate chips optional

Ingredients

Step - 1

Preheat the oven to 350 degrees.  

Whisk together the eggs, butter, and vanilla in a large basin. Combine the mashed banana and grated zucchini in a mixing bowl. Aside; set aside.  

Step - 2

Combine the dry ingredients—sugar, flour, cinnamon, baking soda, salt, and baking powder—in an additional basin.  

Step - 3

Mix the dry ingredients with the liquid ingredients until combined.  

Step - 4

Fill muffin liners to a capacity of 2/3 to 3/4 with the batter.  

Step - 5

Bake for 20 to 25 minutes at 350 degrees.
