⅓ cup granulated sugar ▢3 tablespoons cornstarch ▢2¼ cups 2% milk, or higher ▢2 large egg yolks ▢1 tablespoon salted butter ▢2 teaspoons pure vanilla extract
Using a medium basin, combine sugar and cornstarch by sifting.
Whisk in the egg yolks and chilled milk to combine.
Transfer this mixture to a medium saucepan and bring it to a simmer over medium heat, stirring continuously. Allow to boil while whisking continues for one minute.
When the butter has melted, remove the pan from the heat and incorporate in the vanilla and butter.
Cool the mixture while stirring intermittently; serve tepid or chilled.
