Tennessee Peach Pudding

1 cup all-purpose flour 1/2 cup sugar 2 teaspoons baking powder 1/2 teaspoon salt 1/2 teaspoon ground cinnamon, optional 1/2 cup 2% milk 3 cups sliced peeled fresh or frozen peaches topping: 1-1/2 cups water 1/2 cup sugar 1/2 cup packed brown sugar 1 tablespoon butter 1/4 teaspoon ground nutmeg Vanilla ice cream, optional

Ingredients

Step - 1

Glaze the oven at 400°. Flour, sugar, baking powder, salt, and cinnamon, if desired, should be combined.   

Just until combined, stir in the milk; fold in the apricots. Coat in a greased square baking dish measuring 8 inches.  

Step - 2

In a large saucepan, combine the butter, sugars, water, and nutmeg for the garnish. While agitating, bring to a boil until the sugars have dissolved.  

Step - 3

Over the peach mélange, pour. Bake for 40 to 50 minutes, or until a toothpick inserted into the topping comes out clear and the filling is bubbly.  

Step - 4

If desirable, serve warm or chilled with ice cream.
