SWEET POTATO BREAKFAST RECIPE

2 tablespoons olive oil ▢2 medium sweet potatoes skin on diced into bite sized chunks ▢1 white sweet potato diced into bite sized chunks ▢1 ½ teaspoons sea salt ▢½ teaspoon black pepper ▢2 teaspoons minced garlic ▢¼ red bell pepper chopped ▢¼ green bell pepper chopped ▢garlic salt (with parsley flakes) ▢4 eggs mixed ▢½ cup cheese

Ingredients

Step - 1

Olive oil is heated in a large skillet over medium-high heat.  

Incorporate the potatoes, season with salt and pepper. Stir.  

Step - 2

Reduce the heat, cover, and simmer the pan for 15 minutes. Stir every four to five minutes. Potatoes should be cooked until nearly tender.  

Step - 3

After removing the lid and increasing the heat to high, combine the eggs, bell peppers, and garlic. Continue cooking for an additional five minutes, or until the potatoes are tender and browned and the eggs are cooked.    

Step - 4

Remove from heat, add cheese and serve.
