SPINACH ARTICHOKE STUFFED CHICKEN RECIPE

8 oz cream cheese softened ▢15 oz artichoke hearts drained and chopped ▢2 tsp minced garlic ▢1 cup baby spinach ▢1 cup swiss cheese ▢1/4 cup freshly grated Parmesan cheese ▢salt and pepper to taste ▢1 lb boneless skinless chicken breasts ▢2-3 tbsp extra virgin olive oil divided

Ingredients

Step - 1

Cream cheese, artichoke hearts, garlic, spinach, Swiss cheese, and Parmesan cheese should be combined in a large basin. Salt and pepper to taste, then put aside.  

Add salt and pepper to each chicken breast after drizzling it with olive oil. By slicing the chicken breast in the center without completely exposing the sides, a compartment can be created in the breast.  

Step - 2

Place the spinach and artichoke mixture inside the chicken and use two to three toothpicks to secure.  

Step - 3

Cook the chicken in a large skillet over low heat for 15 to 18 minutes per side.
