CREAMY LEMON CHICKEN PASTA RECIPE

3 boneless skinless chicken breasts cut in half ▢1 lemon quartered ▢2 tsp garlic powder divided ▢1 tsp ground black pepper divided ▢29 oz chicken broth ▢1/4 cup lemon juice fresh ▢16 oz penne pasta cooked as directed on box ▢1 1/2 cups heavy whipping cream ▢1 tsp lemon zest grated ▢salt and pepper to taste ▢shredded cheese (optional)

Ingredients

Step - 1

Squeeze lemon over both sides of the chicken before seasoning with 1 teaspoon of garlic powder and a quarter teaspoon of pepper. Bake for forty minutes at 350 degrees, or until the chicken is thoroughly cooked.  

In the interim, combine the chicken broth with the remaining teaspoon of garlic powder and pepper in a large saucepan. Bring to a simmer, then stir in the pasta and lemon juice. Approximately 25 minutes, stirring intermittently, over medium heat, cook until all liquid is absorbed.  

Step - 2

Chop the chicken into small portions and incorporate them into the pasta, along with the lemon essence and whipping cream. Cook for 5 minutes over low fire, stirring every minute.   

Step - 3

Eliminate from heat. 5 minutes after allowing to rest, whisk and serve. (If desired, sprinkle grated or shredded cheese on top.)
