Whisk together the egg yolks, protein, and medium basin in a cake pan.
Whisk in the cinnamon, sugar, salt, and vanilla extract until homogeneous.
Soak slices of cinnamon bread in the mixture for 10–15 seconds per side, or until saturated.
Melt butter in a sauté pan or on a griddle over medium heat. Cook bread slices for an additional 2–3 minutes per side, or until golden brown.
Serve while still heated, garnished to taste.
