1 cup all-purpose flour ▢3/4 cup cocoa powder ▢1/2 teaspoon baking powder ▢1/2 teaspoon baking soda ▢1/2 teaspoon salt ▢1/4 cup vegetable oil (I used canola) ▢1/4 cup unsalted butter melted ▢3/4 cup brown sugar ▢1 whole egg ▢3 over ripe bananas mashed ▢1 1/2 teaspoon vanilla extract ▢1 cup chocolate chips divided
Turn the oven to 350 degrees Fahrenheit. Three small loaf tins, each measuring 3 by 5 inches, should be greased and set aside.
Whisk together cocoa, flour, baking powder, baking soda, and salt in a small mixing basin.
Whisk together the oil, melted butter, brown sugar, egg, mashed bananas, and vanilla in a large mixing basin until thoroughly combined.
Combine the dry ingredients and a quarter cup of the chocolate pieces with the banana mixture. After stirring until barely combined, divide among the three loaf pans.
The remaining half-cup of crackers should be distributed atop the loaves. Bake for 30 to 35 minutes, or until a toothpick inserted into the center of the mixture emerges clean.
After 5 to 10 minutes of cooling in the pans, transfer to cooling trays to cool completely.
