BACON PANCAKES RECIPE

1 cup all-purpose flour spooned and leveled ▢2 TB sugar ▢1 1/2 tsp baking powder ▢1/2 tsp baking soda ▢1/2 tsp coarse salt ▢1 1/4 cups buttermilk ▢2 TB unsalted butter melted ▢1 lg egg ▢8 slices bacon

Ingredients

Step - 1

Griddle temperature: 200 degrees.  

Combine all dry ingredients (flour, sugar, baking powder, baking soda, and salt) in a basin using a whisk.  

Step - 2

Whisk together the wet ingredients (buttermilk, melted butter, and egg) in a separate basin.  

Step - 3

Wet and granular mixtures should be whisked together until moistened, leaving small to medium lumps.  

Step - 4

Cook bacon over medium-high heat on a griddle until brown and golden on both sides. Separate the bacon into paper towels while reserving about 1 teaspoon of the griddle fat.  

Step - 5

Stir in the batter 1/2 cup at a time over medium heat in a skillet. Add a bacon sliver to the top. Cook for approximately 2 minutes per side, or until golden. Repeat with the remaining batter, if necessary adding additional bacon fat. Serve sliced bacon with maple syrup drizzled on top.
